A healthy, vegetarian salad that is better-than-take-out! Asian Chopped Salad and Peanut Ginger Dressing is filled with gut-friendly foods so is something to feel good about. Chopsticks optional.

Ingredients

  • Peanut Ginger Dressing
  • 3 tablespoons ginger, peeled, chopped (or a 2-inch piece ginger root)
  • ¼ cup rice wine vinegar
  • 2 tablespoons canola oil
  • 1 tablespoon soy sauce
  • 1 tablespoons sesame oil
  • 2 tablespoons peanut butter
  • 1 teaspoon Siracha sauce
  • ½ teaspoon orange zest
  • 1/2 teaspoon ground coriander
  • Asian Chopped Salad
  • 3 cups red cabbage, chopped, about ½ head
  • 3 green onions, sliced, use most of the onion
  • 1 cup cucumber, ¼” dice
  • 1 orange, peeled and diced (save some of the peel for zest in dressing)
  • 1 cup carrot, shredded
  • 1 cup edamame, steamed
  • 1/4 cup chopped peanuts

Instructions

  • Combine all dressing ingredients in a blender or food processer and blend until smooth.
  • Assemble salad ingredients in a large bowl. Drizzle dressing over salad and toss to coat.
