Scale
  • 1 pound ground turkey
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 red onion, finely chopped
  • 1 garlic clove, minced
  • 1-inch piece fresh ginger, peeled, minced, about 1 teaspoon

  • 1/2 teaspoon dried red chile flakes
  • 1/2 cup fresh mint plus 2 tablespoons, chopped, divided
  • 2 tablespoons goat cheese, crumbled

Instructions

  1. Heat: grill and cast-iron griddle to 350° F degrees.
  2. Turkey: In a large bowl, combine ground turkey, red pepper, onion, ginger, cumin, red chile flakes and 1/2 cup mint. Divide turkey mixture into thirds. Press mixture evenly over three flatbreads. Be sure to go clear to the edge.
  3. Cook: Place flatbread on grill grates (using indirect heat) or cast-iron griddle. Close lid. Grill for 12-15 minutes until edges are crisp.
