Healthy nachos help you LiveBest
Sharing food feeds your soul. When you eat with others you connect and laugh and learn. All those things add up to make us feel better. We could use some love after writing checks to the IRS!
Nachos are a perfectly shareable meal.
What I like best about this recipe is that nachos are fun and people love them. Have you tried Apple Nachos?
Sweet Potato Nachos are quick to fix, easy clean up, and economical. Just when your check book needs a break, this recipe saves you.

How to cut sweet potato
Scrub the potatoes. Slice (with skin on) the potatoes evenly, about 1/4-inch thick, so they cook evenly and give you enough body to pop all those luscious toppings into your mouth. To keep your cutting board from slipping as you slice, place a kitchen towel under it or use one with rubber grips such as this Oxo cutting board. I use cutting boards you can put in the dishwasher. Cleanliness is a good thing!
Healthy nacho toppings
The seven-ingredient recipe is below, but, of course, when you make them, you won’t be limited to just seven items. Gussy up these nachos with:
- tomato
- ground cumin
- cayenne pepper
- cilantro
- lime juice
- meat, chicken, fish
- jalapeno
- green chiles
- green onion
- salsa
- plain Greek-style yogurt or sour cream
No chip required! With all the yummy toppings, pretty sure no one will miss the chips. Another great thing about this recipe…no leftovers. They’re good to the last little bean 😉
In case you’re looking for more ways to use beans, here are some ideas.
- White bean dip
- Greek salad with tuna and beans
- One pot baked Greek chicken stew
- Gallo Pinto (black beans and rice)
- Black Bean Quinoa Salad
