I’m a member of TheRecipeRedux food blogger group, which challenges us monthly to develop a theme-based recipe. This month’s theme was a seven-ingredients-or-less recipe. We’re all aware that it’s Income Tax season, so our brains could use some easy arithmetic; as in seven-ingredients-or-less recipes.

Nachos are a perfectly shareable meal. What I like best about this recipe is that nachos are fun and people love them. Plus it’s quick to fix, easy clean up, and did I say economical? Just when your check book needs a break, this recipe saves you.

Sweet Potato Nachos

Seriously Simple Sweet Potato Nachos

Not only is this a money-saving meal, the ingredients will make you swoon with happiness because they are so, so, so good for you. Sweet potatoes, black beans, avocado, and cheese are loaded with good-for-you stuff. Fiber, antioxidants, vitamins and minerals are all served up in one little dish.

Sweet Potato recipe

Scrub the potatoes. Slice (with skin on) the potatoes evenly, about 1/4-inch thick, so they cook evenly and give you enough body to pop all those luscious toppings into your mouth. To keep your cutting board from slipping as you slice, place a kitchen towel under it or use one with rubber grips such as this Oxo cutting board. I use cutting boards you can put in the dishwasher. Cleanliness is a good thing!

Nacho toppings

The seven-ingredient recipe is below, but, of course, when you make them, you won’t be limited to just seven items. Gussy up these nachos with:

  • tomato
  • ground cumin
  • cayenne pepper
  • cilantro
  • lime juice
  • meat, chicken, fish
  • jalapeno
  • green chiles
  • green onion
  • salsa
  • plain Greek-style yogurt or sour cream

Black beans, corn, avocado and sweet potato make these Sweet Potato Nachos seriously simple. Good to the last little bean and no chip required!

Ingredients

  • 1 large sweet potato, sliced 1/4-inch rounds
  • 1 teaspoon chile powder
  • 1 teaspoon canola oil
  • 1 can black beans, drained and rinsed
  • 1 10-bag frozen corn
  • 1/4 cup cheese, shredded
  • 1/2 avocado, chopped

Instructions

  1. Preheat oven to 425° F .
  2. In a large bowl, stir together sweet potatoes with chile powder and oil. Layer potatoes on large baking sheet. Bake for 18-20 minutes until cooked through. A little browning is OK.
  3. Place the corn in a single layer in an ovenproof skillet. Roast in oven, stirring once. Cook until some are turning brown, 18-20 minutes.
  4. When potatoes are done, top with black beans, corn, and cheese. Return to oven and cook until cheese melts. Sprinkle with avocado. Serve.
