Healthy nachos help you LiveBest

Sharing food feeds your soul. When you eat with others you connect and laugh and learn. All those things add up to make us feel better. Nachos are a perfectly shareable meal.

What I like best about this recipe is that nachos are fun and people love them. Have you tried  Apple Nachos?

Sweet Potato Nachos are also quick to fix, easy clean up, and economical.

Seriously Simple Sweet Potato Nachos

Not only is this a money-saving meal, the ingredients will make you swoon with happiness because they are so, so, so good for you. Sweet potatoes, black beans, avocado, and cheese are loaded with good-for-you stuff. Fiber, antioxidants, vitamins, and minerals are all served up in one little dish.

  1. Preheat oven and baking sheet to 425° F .
  2. Stir together sweet potatoes with chile powder and oil. Scatter potatoes on heated baking sheet. Bake for 15-18 minutes until cooked through. A little browning is OK.
  3. Top potatoes with corn and black beans. Bake 5 minutes
  4. Add cheese. Return to oven and bake until cheese melts. Sprinkle with avocado.

The Ingredients

  • 1 large sweet potato, sliced 1/4-inch rounds
  • 1 teaspoon chile powder
  • 1 teaspoon canola oil
  • 1 can black beans, drained and rinsed
  • 1 10-ounce bag frozen corn, could use 1 15-oz can
  • 1/4 cup cheese, shredded (mozzarella, Monterey Jack, or cheddar)
  • 1/2 avocado, chopped

Healthy nacho toppings

Gussy up these nachos with:

  • tomato
  • ground cumin
  • cayenne pepper
  • cilantro
  • lime juice to squeeze over
  • cooked meat, chicken, fish
  • jalapeno
  • green chiles
  • green onion
  • salsa
  • plain Greek-style yogurt or sour cream

No chip required! With all the yummy toppings, pretty sure no one will miss the chips. Another great thing about this recipe…no leftovers. They’re good to the last little bean 😉

How to cut sweet potato

Scrub the potatoes. Slice (with skin on) the potatoes evenly, about 1/4-inch thick, so they cook evenly and give you enough body to pop all those luscious toppings into your mouth. To keep your cutting board from slipping as you slice, place a kitchen towel under it or use one with rubber grips such as this Oxo cutting board. I use cutting boards you can put in the dishwasher. Cleanliness is a good thing!
